Are you bedeviled by eggs?

Deviled eggs are an elegant guilty pleasure.  For years, they were out of favor as a result of the cholesterol conscious anti-egg movement.  But today, eggs have been “rehabilitated.”  Eaten in moderation, like everything else, eggs are a great source of protein and a good part of a healthy diet.  Deviled eggs go with everything from fine wine to craft brews to trendy cocktails. 

Modern day deviled eggs date back to ancient Rome when boiled eggs were served as an appetizer course.  Stuffed eggs were also found in Spain in the 1200s. 

Deviling refers to the cooking process of adding spice to ingredients.  There are almost as many recipes for deviled eggs as there are families who serve them.  What’s your favorite ingredient to add to deviled eggs?
